Spiced Baked Pears with Cordyceps and Tremella

This is great recipe to keep in the rotation this time of year to help support yourself through the changing of seasons. Cordyceps supports healthy immune function and lungs while tremella helps to combat dryness, which can be common this time of year. 

Ingredients:

  • 2-3 pears
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon each ground cardamom and cloves
  • 1/4 cup chopped walnuts
  • 1 teaspoon each cordyceps and tremella
  • pinch of nutmeg
  • sea salt

Preheat oven to 350 degrees.

Cut pears in half and remove core, stem and seeds. Place in a greased baking dish. In a small bowl combine maple syrup, spices and mushrooms. Drizzle over the pears sprinkle with walnuts sea salt. Cover and bake for 15 minutes. Remove the cover and bake another 15 to 20 minutes until pears are soft and slightly browned. 

This dish is great as breakfast, snack or dessert and if you want to up the deliciousness you can top with spiced whipped cream or greek yogurt.
